Banana Lemon Pie

Ingredients:
3 cups pecans or walnuts
1 1/2 cups raisins
4 medium bananas
Juice and zest from 1 1/2 small to medium lemons
Poppy seeds and/or fruit for garnish
1. Process nuts in processor, add raisins and process until mixture clumps together. Press into a 9 x 9 pie pan.
2. Grate the zest on top of the crust.
3. Juice lemons into a bowl. Slice bananas and add to the lemon juice. Stir gently to coat the bananas with the juice and pour into the pie crust.
4. Decorate with the poppy seeds, fruit, mint leaves, etc.
Note: I also made this pie with orange juice/zest and instead of using 3 cups of walnuts. I substituted one of the cups with coconut. It was soooo good with a very tropical taste to it. I even had it for breakfast. If you like more of a zesty flavor then definitely try the lemon.
